Antipasto Platter

 
Cold cuts, who doesn't love 'em! Not only is this appetizer healthy, but makes for a beautiful centerpiece for your table. The colors pop and so will your taste buds!
 
Ingredients -
3 (6.5 ounce) jars Marinated Artichoke Hearts, undrained
1 (12 ounce) jar Roasted Red Peppers, drained and sliced length wise
1 can large pitted Black Olives
2 teaspoons Olive Oil
1 tablespoon Red Wine Vinegar
Salt, to taste
Fresh Ground Black Pepper, to taste
3 ounces Breadsticks
3 ounces thinly sliced Prosciutto or thinly sliced cooked Ham
 
Preparation:

1. On a large decorative platter, arrange Artichoke Hearts, Roasted Peppers and Olives.

2. Drizzle evenly with olive oil and vinegar.

3. Sprinkle with salt and pepper.

4. Wrap each breadstick with an equal amount of Prosciutto or cooked Ham; place on platter.

You can easily substitute your favorite thinly sliced deli meat for the Prosciutto. Eat what you love!

You can pick up ready made Breadsticks at your grocers if you are pressed for time. You could also purchase canned "twisty" style breadsticks that only take a few minutes to bake. These not only make your kitchen smell wonderful, but they are pretty on the platter!
