Mexicorn, real mayonnaise, sour cream, chopped scallions, chopped fresh cilantro, Cheddar cheese and lime juice seasoned with ground cumin, cayenne pepper and kosher salt.
Ingredients -
3 (11 ounces each) cans Mexicorn, drained
1 cup Mayonnaise
2 cups Sour Cream
5 or 6 Scallions, chopped
1/2 cup chopped Fresh Cilantro
1 pound Cheddar Cheese, shredded
1 teaspoon Fresh Lime Juice
1 teaspoon Ground Cumin
1 pinch Cayenne Pepper
1 pinch Kosher Salt
Preparation:
1. Add corn, mayonnaise, sour cream, scallions, cilantro, Cheddar cheese and lime juice to a large serving bowl.
2. Stir to mix well.
3. Season corn dip with cumin, cayenne, and salt.
4. Refrigerate until serving.
