Crab Napoleons

 
Crab Napoleons are a tangy crabmeat spread between baked puff pastry rounds. Tiny sandwich like crab appetizers are quick and easy to make. Perfect recipe to double and serve to party guests.
 
Ingredients -
1 Frozen Puff Pastry Sheet
1 package (8 ounces) Cream Cheese, softened
1 tabespoon Milk
1/4 teaspoon Fresh Ground Black Pepper
1 tablespoon Prepared Horseradish
6-8 ounces Fresh Crabmeat, drained
4 Scallions, sliced
1/2 cup sliced Almonds
Paprika
 
Preparation:

1. Allow pastry to thaw to room temperature.

2. Preheat oven to 400°F.

3. Using a 2” cookie cutter cut 12 circles.

4. Place circles equal distance apart on baking sheet.

5. Bake pastry until golden brown, about 15 minutes.

6. Cool baking sheet on wire rack.

7. Add cream cheese to a large mixing bowl, and mash until smooth.

8. Stir in milk, pepper, horseradish, and crabmeat.

9. Split the pastries into 2 layers making 24 circles.

10. Spread crabmeat mixture on 12 bottom pastry circles.

11. Top with scallions, sliced almonds, and top pastry circles.

12. Sprinkle with paprika. Makes 12 crab Napoleons.

Fresh Horseradish Recipe
Combine 1 cup peeled, ½” cubed horseradish root, 3/4 cup vinegar, 2 teaspoons sugar, 1/4 teaspoon salt in a food processor or blender; process until pureed.

Crabmeat
Substitute a good quality 6 ounce can of crabmeat, if fresh crabmeat is unavailable. Fresh or canned, be sure to remove any shell or bone fragments.
