Chili-Rubbed Halibut Kabobs

 
Delicious garlic and chili marinated halibut kabobs, grilled and served with a mild avocado salsa. The salsa is amazing on its on, and can be served on garlic toast, or with tortilla chips.
 
Ingredients -

2 pounds (six 6-ounce fillets) Alaskan Halibut, cut into 1-inch pieces
8 Wooden Skewers
1 tablespoons Chili Power
4 tablespoons Italian Salad Dressing
2 cloves Garlic, crushed

Avocado Salsa:

1/2 Avocado, 1/4 inch dice
1 tablespoon Olive Oil
1 large Tomato, diced
1/2 Red Onion, diced
1 Jalapeño Pepper, seeded, finely diced
juice of 1/4 Fresh Lime
1 clove Garlic, minced
2 tablespoons Fresh Cilantro, minced
Salt and Pepper, to taste

 
Preparation:

1. In a large bowl, combine chili powder, Italian salad dressing and garlic.

2. Add halibut to marinade. Stir to coat. Refrigerate 1-2 hours

3. Thread 5 -6 halibut pieces on each of the 8 skewers.

4. Preheat gas, charcoal or indoor grill.

5. Grill halibut kabobs on lightly oiled grill or grill rack, approximately 8 minutes (to desired doneness).

6. Serve kabobs with avocado salsa.

Avocado Salsa:

1. In a serving bowl, combine half the lime juice, jalapeño chili pepper and red onion.

2. Stir in tomato, cilantro and avocado.

3. Drizzle with 1 tablespoon olive oil.

4. Season with salt and pepper. Add more lime juice if necessary.

5. Taste, add more lime juice, salt and pepper as necessary. Hold aside, chilled.

Cooking Tip

Halibut
Halibut is a delicous Alaskan white fish. Find fillets that are 3/4-1 inch thick for cutting into pieces for kabobs. Haddock, cod, and swordfish make great substitutes for halibut.

Soak skewers in water at least 20 minutes or the skewers risk burning when put on the grill.
