Garlic Bites

 

Pastry dough prepared from mustard powder, crushed garlic, butter and sharp cheddar cheese. Dough is chilled, rolled out, and cut into tiny squares. Dough squares are baked until golden.

 
Ingredients -
4 ounces Self-Rising Flour
2 ounces Butter
2 ounces Sharp Cheddar Cheese, grated
2 Garlic Cloves, crushed
1/2 teaspoon Dry Mustard Powder
1 tablespoon Cold Water
Salt, to taste
 
Preparation:

1. Sift the flour into a medium bowl.

2. Add the mustard powder and the crushed garlic.

3. Cut the butter into small chunks and slowly rub it into the flour.

4. Add a little cheese now again as you go along.

5. Continue to combine the ingredients, adding a little cold water at the end if necessary to get a nice lump of pastry dough.

6. Place the pastry in the fridge to rest for 15 minutes.

7. Heat the oven to 400 degrees F.

8. Roll out the pastry on a lightly floured board to form a square about 8 inches each side.

9. With a sharp knife divide the pastry into eighths in each direction to give 64 small squares.

10. Transfer the squares to a greased baking tray, arranging the garlic bites with a little space between them. Grind a little salt across the tops.

11. Bake for 10 to 15 minutes.

12. Remove and allow to cool.

13. Transfer the garlic bites to an airtight container, they'll keep for a day or two.

Garlic

Garlic can be prepared quickly by placing the individual cloves on a flat work surface, laying the flat edge of a large knife over the top of it and pushing the knife down briskly to crush. The skin of the garlic will come off easy at this point and the clove can be crushed further, minced or chopped.

Pre-minced garlic can be purchased in stores, often in the produce section or with the spices. The pre-minced garlic is a time saver, but the flavor is not as good as fresh.
