Nacho Niblets

 
Fun Mexican style spicy refried bean mixture fills corn chip cups. Corn chip cups are topped with salsa and sour cream mixture.
 
Ingredients -
1/3 Cup Sour Cream
1/4 Teaspoon Chili Powder
1/2 Teaspoon Ground Cumin
1/8 Teaspoon Ground Cayenne Pepper
1/2 Cup Red Onions (chopped)
1 Clove Garlic (peeled and chopped)
1 Tablespoon Vegetable Oil
1 Can Refried Beans (16 oz can)
1 Tablespoon Cilantro (chopped)
22 Corn Chip Cups
1/2 Cup Taco Cheese Blend
1/2 Cup Salsa (drained)
 
Preparation:

1. Heat the oven to 375 degreesn.

2. In a bowl combine the sour cream and the chili powder.

3. Cook the cumin, cayenne pepper, onions and garlic in the oil for 3 minutes.

4. Add the beans and cook for another 3 minutes.

5. Add the cilantro.

6. Fill the chips with the mixture.

7. Top with the cheese and make for 1 minute.

8. Top with the salsa and sour cream mixture.

Cooking Tip

Cayenne Pepper
You can certainly add more cayenne pepper to achieve a hotter appetizer. Chopped jalapeno pepper would also add a nice kick.
