Always a party favorite, this variation of the classic spinach dip is sure to please. It is quick, easy, delicious, and will become a staple in your entertaining!
Ingredients -
2 pounds Pepperjack Cheese (cut into chunks for easier melting)
2 cups Half-and-Half Cream
1 large Tomato, diced
1 small Onion, diced
1/2 cup Red Bell Pepper, diced
3 cups Spinach, rinsed and finely chopped
Preparation:
1. Over a double boiler slowly melt the pepperjack cheese.
2. Whisk in half and half until smooth and creamy.
3. Stir in fresh veggies.
4. Transfer to a serving bowl.

While doing your grocery shopping, pick up some of your favorite artisan bread. Cut into 1/2" diagonal slices, drizzle with olive oil, lightly sprinkle with freshly grated parmesan cheese and toast in the oven for 8 minutes at 375 degrees. YUMMY!
