Sundried Tomato Hummus

 

Hummus prepared chickpeas, lemon juice, tahini, roasted garlic, olive oil, fresh parsley, soy sauce, ground cumin, ground red pepper, sea salt and sun-dried tomatoes.

 
Ingredients -
1 cup Sun Dried Tomatoes, chopped and soak in boiling water for 10 minutes
1 (15 ounces) can Chickpeas, rinsed and drained
1/4 cup Lemon Juice
3 tablespoons Tahini
2 tablespoons Roasted Garlic
2 tablespoons Olive Oil
2 tablespoons Fresh Parsley
1 tablespoon Soy Sauce
1-1/2 teaspoons Ground Cumin
1/2 teaspoon Ground Red Pepper
1 pinch Sea Salt
 
Preparation:

1. Add chickpeas, lemon juice, tahini, roasted garlic, olive oil, fresh parsley, soy sauce, ground cumin, ground red pepper, and sea salt to food processor.

2. Process until smooth.

3. Scoop hummus into small serving dish.

4. Fold in sun-dried tomatoes and serve.

Cooking Tip

Roasted Garlic

Roasting garlic is a simple process and can be done effectively at home with little trouble. The whole garlic bulb is used. Slice the very top of the garlic across all cloves. Place in shallow roasting pan, drizzle with garlic and roast in a hot oven about an hour. The roasted garlic will easily squeeze out and the skin is discarded.
